🌿 Vegan and Gluten-Free Chard Pie

Ingredients

For the Base Layer:


• 2 bunches of Swiss chard (finely chopped)

• 1 carrot (grated)

• 1 onion (finely diced)

• A pinch of salt


For the Topping Batter:


• 1 cup of lentil/chickpea/buckwheat/sorghum/oat flour (as preferred)

• 1-1.5 cups of water (depending on consistency)

• 1 teaspoon of baking soda or gluten-free baking powder

• Salt, black pepper

• Desired spices (vegetable powder, cumin, sweet paprika, turmeric, etc.)

• 1 tablespoon of olive oil

• Optional: 1 tablespoon of psyllium husk/chia/ground flaxseed

• Optional: 2 tablespoons of tapioca starch (for crispiness)

Preparation

1. Prepare the Base:

• Finely chop two bunches of chard, grate one carrot, and dice one onion.

• Rub the onion lightly with a pinch of salt to soften it.

• Spread this mixture evenly in a baking dish.

2. Prepare the Batter:

• In a separate bowl, mix the flour of your choice with water to form a smooth batter.

• Add baking soda or gluten-free baking powder, salt, black pepper, and your choice of spices.

• If desired, include psyllium husk, chia, or ground flaxseed for added texture, and tapioca starch for crispiness.

• Drizzle in the olive oil and mix thoroughly.

3. Combine and Bake:

• Pour the batter over the chard mixture, ensuring an even spread.

• Bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until the top turns golden brown.

• If the base remains slightly wet after baking, flip the dish and bake for an additional 5-10 minutes.

4. Optional Toppings:

• Add grated cheese, sesame seeds, or sunflower seeds on top before baking for extra flavor and texture.
